Two Great Rib Eye Steak Recipes

Today I want to share with you two of my favorite rib-eye steak recipes,Deluxe Pan Fried Rib Eye Steak and a Pan Seared Rib Eye recipe.

Rib-eye steak is a boneless cut from the rib section. The term eye in its name refers to the round cross-section of a muscle that is not well exercised, making the rib-eye steak very tender. Succulent and well-marbled with fat, the rib-eye is also known as a Delmonico steak after a chic New York restaurant, Delmonico’s that popularized this luxury steak in the mid 1800s.

Deluxe Pan Fried Rib Eye Steak Recipe
4 Beef rib eye steaks 1″ thick
2 Large potatoes
3 tb Grated Parmesan cheese
1/4c Balsamic vinegar Olive or salad oil
1 Medium onion
1 ts Ground black pepper

Preheat broiler. Slice unpeeled potatoes crosswise into 1/4″ slices. On a ungreased jelly roll pan arrange potatoes in a single layer overlapping. Drizzle, if necessary, potatoes with 2 tablespoons of oil and sprinkle with 1/2 teaspoon salt. Place jelly roll pan with potatoes in broiler about 4″ from heat source and broil for 10 minutes turning them once. Sprinkle potatoes with Parmesan cheese. Broil 3 broiling dice onion. In a 12″ skillet over medium heat in 1 tablespoon of hot oil cook onion until tender. Remove mixture with a slotted spoon to a bowl.

Sprinkle steaks with pepper and 1/2 teaspoon salt. In same skillet over medium high heat in 1 tablespoon of hot oil cook steaks until browned on both sides about 8 minutes for rare or until of desired doneness. Place steaks on a warm platter.

Reduce heat to medium and spoon off fat. Add vinegar and cooked onion. Cook 1 minute stirring in order to lose the brown bits on bottom of skillet. Spoon onion mixture over steaks. Arrange Parmesan potatoes around steaks. To serve, cut each steak in butterfly cut or in half.

Pan Seared Rib Eye Recipe
1 boneless rib eye steak
1 1/2-inch thick
Canola oil or PAM oil spray to coat
Salt and ground black pepper

Place 10 to 12-inch cast iron skillet in oven and heat oven to 450 degrees. Bring steak(s) to room temperature.

When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 to 3 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute or two to both of the oven turns.)

Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

The knobs and handles of your BBQ grill can also be cleaned and polished by scrubbing them lightly with baking soda. Dry backing soda can also be used to shine and polish your grill by sprinkling it on a soft damp cloth and lightly scrubbing the exterior parts which are made of chrome or stainless steel. One of the reasons that you guess is because its hard to believe something until you can actually see it. But I want to help you to wrap your head around the idea that you have to believe it first and then youll see it.

Quantifying your portion sizes, temperature and testing are great ways to allow you to stop guessing. Lets go ahead and look at how that might work.

4 Ways to quantify your cooking and eliminate guessing:

Cooking Tip #1: Temperature

Temperature is important in cooking. Some foods will make you sick if you dont cook them at the right temperature. Other foods will be utterly destroyed if you cook them much above “medium heat”.

Use water as an indicator of temperature. Water evaporates at 212 degrees F, so if you are using a saute pan, if you sprinkle a little water in the pan and it evaporates, you know that the pan is at least at the boiling point of water. The quicker the water evaporates, the hotter your pan is. This works on the grill as well.

You can also test a small piece of your food to test for temperature. For example, maybe youre going to fry some chicken in oil on the stove, but you cant tell if the oil is hot enough or not. Dont ruin a whole breast by putting it into oil thats not hot enough. Instead, take a small piece of the chicken and drop it in the pan. Youll know right away whether the oil is hot enough or not to cook your food.

Cooking Tip #2: Test a Small Quantity

Sometimes, you just need to test a small quantity of something before cooking the whole thing. This is especially helpful in roasting. I can tell you that when I had my catering business, sometimes we would have to make hundreds or thousands of crab cakes in one big batch. Well, we would take one crab cake, cook it and test it. This would allow us to make adjustments on the rest of the batch and make a superior product! Get a digital scale and begin to understand your raw portions sizes. Let me tell you a story about how I discovered the importance of this tip.

When I used to make spaghetti for myself and my wife, I would cook a whole pound of spaghetti, basically one whole box for the two of us. After finishing our meal, there was always spaghetti left over, we would put the leftover spaghetti in the refrigerator and a few days later throw it out because we wouldnt eat it.

With my digital scale, I started by weighing 8 ounces of dry pasta for the two of us. I cooked the 8 ounces and still had some leftover, so I adjusted it down until I knew EXACTLY how much dry pasta to cook for the two of us5.3 ounces is our perfect amount. Knowing this finally made cooking pasta easy, we dont overeat and we dont have leftovers.
